Plain cheesecake with fruit topping

Pies are my mom’s holiday territory, but cheesecake has become a necessity for my sister at any family function. Cheesecakes with fruit toppings are so much easier, no need to worry about any cracks that form on top, the only real secret is bringing everything to room temperature and making sure ingredients are mixed well. – Joe

Nostalgia Farms’ Plain Cheesecake with Mrs. Wages Fruit Topping

Crust

Ingredients:
1 cup crushed graham crackers
2 tablespoon sugar
¼ cup melted butter
9 inch spring-form pan

Directions:

1. Mix first three ingredients and pat evenly in bottom of spring form pan.

2. Refrigerate while preparing filling.

Cheesecake

Ingredients:
(3) 8oz cream cheese packages, room temperature
1-½ cups sugar
6 eggs, room temperature
¼ cup sour cream, room temperature
Zest of one lemon
1-½ teaspoon vanilla
1 pint Mrs. Wages freezer strawberry jam

Directions:

1. In large mixing bowl at medium beat cheese until light.

2. Add sugar and vanilla mix well.

3. Add eggs one at a time mixing well between each one.

4. Add sour cream and lemon zest.

5. Pour into crust in pan: bake 450 for 15 minutes reduce heat to 250 and bake one hour longer until set in middle.

6. Cool cheesecake in pan on wire rack. Then refrigerate 5 hours or overnight

7. Spread Mrs. Wages freezer Jam on top. Remove from spring form pan, slice and serve with whipped cream.
