Chicken Chili

For healthy alternatives, chicken makes a great substitute for ground beef.  This recipe comes from Pam Van Camp, Supervisor, Mississippi Valley Surgery Center.

Chicken Chili

Ingredients:
5 frozen chicken breasts
1 large jar of Randalls® navy beans
2 – 15 oz cans of Rotel®
1 large can (family sized) cream of chicken soup
3 cups water
1 pkg – Williams® Regular chili mix (not chicken chili mix)
1 stick of margarine or butter
1/2 cup flour

Directions:
1. Combine frozen chicken, navy beans, Rotel®, cream of chicken soup and water in a crockpot.

2. Cook on low for six hours.

3. Remove chicken and dice.

4. Melt butter/margarine in a saucepan and then add flour to make a roux.

5. Add roux to the crockpot, then add the diced chicken.

6. (Optional) Serve with cheese (CoJack or Cheddar) and tortilla chips.
