Texas Taco Chili

Try this unique southern twist to an old-time favorite.  This recipe was provided to us by Sue Lohf, Director, Human Resources, Mississippi Valley Surgery Center.

Texas Taco Chili

Ingredients:
4 boneless chicken breasts -cooked and diced
1 lb ground beef
1 onion chopped
1 green pepper diced
1 – 28 oz can diced tomatoes – undrained
1 pkg. taco seasoning mix
1 pkg. ranch dressing mix (Hidden Valley®)
1 – 10 oz. can Rotel®
1 – 6 oz. can tomato paste
2 – 17 oz. cans whole kernel corn, undrained
2 – 15 oz. cans ranch style pinto beans
1 – 15 oz. can diced potatoes-diced
2 cups water
*Tortilla chips
*Grated cheese
*sour cream

*  Serve over broken chips and top with cheese and sour cream if desired.

Directions:
1. Cook chicken and dice.

2. Brown beef, onion and bell pepper in a large pot.  Drain.

3. Add tomatoes with their juice, taco seasoning, and ranch dressing.

4. Mix in Rotel®, tomato paste, corn, beans, water and salt and pepper to taste.

5. Heat to boil, then add chicken and potatoes and simmer 1 hour.  Stir frequently.  You may need to add more water depending on consistency you desire.
