As the days get longer, we look towards Spring!

Greetings from Nostalgia Farms, where the snow drifts are piled high, and where we pour through seed catalogs and dream of green vegetables to come. February and farming is like trying to go full speed with the brakes on, as much as I want to get into full swing there is still a matter of timing and no need to rush things!

Still, hope abounds as the days are getting longer, and winter will begin to loosen its grip. We should be picking our first batch of spinach by the end of February. We have a waiting list of anxious consumers that know it will not be long.

The planting of seedlings will kick into full swing by the end of the month as well, trying to cheat Mother Nature by a few weeks. Parsley, Rosemary, thyme and a variety of cool weather vegetables will be the first to go into seed flats, in the basement under florescent lights.

Still, to enjoy the season, I spend a lot of time in the kitchen.  In the spirit of Valentines Day and for my love of chocolate, I’d like to share a simple chocolate truffle recipe.
