Asparagus and Goat Cheese Frittata

MVHNews’ food blogger, Joe Dennis of Nostalgia Farms shares a delicious recipe for a frittata made with asparagus and goat cheese … fresh as spring.  Enjoy!

Nostalgia Farms’ Asparagus and Goat Cheese Frittata

Ingredients:
1/2 pound, fresh asparagus cut into one-inch pieces
1/4 cup finely chopped, purple onion
2 cups of eggs
1/4 cup, half and half
1/4 cup, Parmesan cheese
1/2 cup, goat cheese
1/2 – 1 teaspoon, hot sauce
1/2 teaspoon, fresh grated nutmeg
Salt and pepper
2 Tablespoons, olive oil

Directions:
1. Pre-heat oven to 425.

2. In a large nonstick (straight sided) oven proof pan heat olive oil, add onion sauté until soft, add asparagus and cook for 3-5 minutes.

3. In a separate bowl beat eggs with half and half add rest of ingredients except for goat cheese.

4. Reduce heat to medium add egg mixture and cook without stirring until eggs just start to bubble or set around edges.

5. Crumple goat cheese on top of frittata

6. Place in oven until set through. Approximately 20-30 minutes.

Let cool for 5 minutes loosen edges with a knife and slide onto serving platter. This is a great dish to serve either for breakfast, lunch or light dinner. Can also be served room temperature, so it’s a great dish to take to family events
