Nostalgia Farms’ Smoked Salmon Deviled Eggs
What a colorful and tasty addition to any Easter buffet – Joe Dennis, Nostalgia Farms

Ingredients:
1 dozen hard boiled eggs
½ teaspoon horseradish
2 tablespoon sour cream
1 tablespoon mayonnaise
¼ cup shredded smoked salmon
1 tablespoon fresh dill
Salt and pepper to taste
Salmon Roe*

Directions:

1. Cut eggs in halve and remove yolks to a separate bowl.

2. Add horseradish, sour cream and mayonnaise and whip with a hand mixer until smooth.

3. Fold in salmon and dill and mix thoroughly, salt and pepper to taste.

4. Using a pastry bag fitted with a large star tip pipe mixture into empty egg white halves.

5. Top with a small amount of Salmon Roe and a small piece of fresh dill.

*Salmon Roe is the eggs of the salmon. When purchasing high-quality salmon roe, it is usually preferable to be able to taste the roe first. The individual eggs should crack open with a crisp “pop” when pressed against the roof of the mouth, and the roe should have a faintly salty, slightly fishy flavor with a thin sheen of oil, which does not become overwhelming in the mouth. Greasy soft roe is an inferior product, and it should be rejected.
