Nostalgia Farms’ Pickled Beets
One of the easiest pickles to make and always a huge hit at any picnic or holiday meal. - Joe Dennis, Nostalgia Farms
Ingredients:
3-4 pounds fresh beets
1-2 med sweet onion, sliced
2 cup cider vinegar
2 cups water
2 cups sugar
1 tsp whole allspice
1 tsp whole cloves
1 stick cinnamon
Directions:
1. Trim leaves off beets leaving approximately one inch of stems attached, wash beets and place in large pot of boiling water, cook until fork tender.
2. Strain and discard cooking liquid, place beets in cold water until cool enough to handle.
3. Slip or peel beets and slice into ¼ inch slices
4. Cut onions in half and then into ¼ inch slices mix into sliced beets.
5. Combine rest of ingredients into pan and bring to a boil, reduce heat and simmer for 10 minutes.
6. Pour liquid over beets and refrigerate for one week before eating, or pack quart jars with beet and onion mixture and pour liquid to within ½ inch from top of jar. Seal, place in a boiling water bath and process for 20 minutes.
