Spaghetti squash with pasta sauce from Nostalgia Farms

Top it with fresh parsley, pasta sauce and parmesan cheese and your kids won’t even know they’re eating their vegetables!

 

Ingredients
1 large or two small spaghetti squash
1 jar Mrs. Wages pasta sauce
¼ cup butter Parmesan cheese
Salt and pepper
Fresh chopped parsley

 

Directions
1.  Cut squash in half lengthwise and scoop out seeds.

2. Place in microwave safe container cut side down with ¼ inch of water. Cover loosely with plastic wrap and microwave on high until fork tender usually 10-15 minutes.

3. Heat pasta sauce in separate pan on stove.

4. Remove squash, turn upright into oven proof pan, using a fork scrape squash to separate strands. Mix one or two tablespoons of butter in each half of squash. Salt and pepper to taste.

5. Ladle 1 cup of pasta sauce over squash and sprinkle generously with parmesan cheese. Place under broiler until lightly browned. Top with fresh chopped parsley and serve. (A great way to get the kids to eat their vegetables!)

 

About Spaghetti Squash
(also called vegetable spaghetti, vegetable marrow, or noodle squash) – A small, watermelon-shaped variety, ranges in size from 2 to 5 pounds or more. It has a golden-yellow, oval rind and a mild, nutlike flavor.

The yellowiest Spaghetti squash will be the ripest and best to eat. Those that are nearly white are not very ripe. Although it may seem counterintuitive, larger spaghetti squash are more flavorful than smaller ones. When cooked, the flesh separates in strands that resemble spaghetti pasta.
