Holiday Apple Salad

This is a lighter version of the traditional Waldorf salad, using local apples and honey keeps it in our theme.

  • 4-5 red delicious apple cored and chopped
  • 1 cup raisins
  • 1 cup chopped celery
  • ¾ cup chopped walnuts
  • 1 orange juice and zest
  • 2 tablespoons honey
  • ½ teaspoon mustard powder
  • Vegetable oil

Combine first four ingredients and toss with half of the orange juice set aside.

In a small bowl combine rest of juice, zest honey, mustard and a pinch of salt. Whisk in a few tablespoons of oil to make a thin dressing. Mix dressing and chopped ingredients together chill and serve.
