Honey Roasted Peanuts

This is a simple make-ahead treat, great for snacking, cocktail parties or a great hostess gift. Vellum bags and some ribbon make gift packaging easy.

  • 1 pound Virginia or Spanish Peanuts
  • ½ cup sugar
  • ¼ cup honey
  • 1 tablespoon salt
  • 1 tablespoon butter
  • Pinch of cayenne pepper

Mix all ingredients together and spread on a cookie sheet. Bake at 300 degrees for 20-25 minutes. Using two forks stir 2 or 3 times during the cooking process; the second fork is to scrape off the stirring fork. (It’s hot and sticky so be careful.)

Prepare a second cookie sheet by dusting the bottom with a thin layer of sugar. Dump cooked peanuts onto sugared cookie sheet. Using the two forks spread out peanuts into a single layer. Allow to cool completely. Store in an airtight container.
