Cucumber, mint and yogurt soup

2 cups peeled seeded cucumber

1 ½ cups plain yogurt

½ tsp each salt and

pepper

2 tablespoon fresh mint chopped

Simply add all ingredients to a blender and process until smooth. Refrigerate for at least an hour before serving. Top with chopped cucumber and a

sprig of mint.
